  1. First wash and peel all the carrots and cut into pieces.now add cut carrots into a grinder/food processor to shred the carrots. do not run the mixer continuously. run the mixer for a second or two,so the carrots will not gets juicy.
  2. Now take out the shredded carrots into a micro safe bowl, add ghee, mix and microwave for 10 mins.
  3. After 10 mins. add sugar mix well, add milk powder mix again and keep it in microwave for another 5 min to cook.
  4. Now add cardamom powder and a table spoon of ghee (if required / optional)and mix well.cook for another few minutes, (just for 2 or 3 mins)and it's done.u can also add chopped nuts to it.
  5. Remove the carrots mixture into greased or lined tray or round cake pot to set. press nicely.
  6. Meanwhile prepare a uper layer – add mawa in a pan and roast for few minutes till it changes it's colour slightly.(I have used homemade mawa)now add condensed milk to the mawa and cook for a min and switch off the heat.
  7. Now add mawa mixture on the set carrot mixture,press gently and sprinkle some nuts flakes and pat it gently with the help of the back of the spoon.
  8. Cover it and let it cool till it set completely or keep it in refrigerator to set.
  9. Delicious quick (without grating carrots) carrot mawa fudge is ready, cut it into shapes of your choice and serve.
